ICEIN™ Food Processing Aid

1. What is ICEIN™ ?

  • A processing aid based on a patented protein polysaccharide complex that maintains quality of fresh cut vegetables. It does this by retarding dehydration and oxidation of cut vegetable surfaces.

 

2. ICEIN™ is used on:

  • Carrots
  • Celery
  • Broccoli
  • Fresh-cut potato products (See Photo Below)
  • Fresh-cut sweet potatoes (See Photo Below)

 

3. What are the benefits of ICEIN™?

  • A processing aid based on a patented protein polysaccharide complex that maintains quality of fresh cut vegetables. It does this by retarding dehydration and oxidation of cut vegetable surfaces.
  • Prevents white blush and desiccation of processed carrots and sweet potatoes.
  • Inhibits discoloration and desiccation of cut ends in celery and broccoli.
  • A coating for French fries which enables pre-cut fries to maintain their pristine color and crispness for 14 days in a modified atmosphere bag for sale in supermarkets nationally without using sulphites. These ICEIN™ treated fries have the taste, color and texture of real home-made fresh-cut French fries.
  • Can be used in conventional production lines with normal antimicrobial agents.
  • All components of ICEIN™ are classified as G.R.A.S., (Generally Regarded As Safe) by the FDA.

Untreated fries and fries treated with three different ICEIN formulations. Treatment #2 is the formulation we now sell.
